Mejadra (mujaddara) is a signature Eastern Mediterranean dish of lentils garnished with crispy onions. Here we replace the rice or bulgur used in the traditional recipe with freekeh. It surprise your taste buds in the best way possible.
INGRIDIENTS
- 2 Cups cooked lentils
- 1.5 Cups Firegrain Freekeh, uncooked
- 3 Cups water
- ¼ Cup olive oil
- 2 Onions, cubed
- 1 Tsp allspice (can be replaced with cumin)
- Salt and pepper
SERVING SUGGESTION
- Yogurt
- 1 Cucumber
- 2 Tomatoes
- 3 Tbsp pomegranate seeds
INSTRUCTIONS
Step 1
In a wide frying pan fry the onion in the olive oil until caramelized and golden brown. Add the allspice and stir.
Step 2
Add the freekeh and the cooked lentils and stir. Add the water, salt and pepper and stir well.
Step 3
Bring to the boil and lower the heat, stirring occasionally. Cook until all the water has evaporated.
Serving suggestion:
Serve with yogurt and a salad of tomato and cucumber. Also, pomegranate seeds can be sprinkled over the dish when serving.
