A great and refreshing recipe of the old fashioned Galilean Freekeh. Add some lemon zest to the yogurt dressing to give it an extra punch.
INGRIDIENTS
- ¼ Cup olive oil
- 25g Butter
- 2 Medium white onion, chopped
- 1 Garlic clove, chopped
- 150g Fire Grain Freekeh
- ¼ Tsp ground cinnamon
- ¼ Tsp allspice
- 1 Tsp ground cardamom
- 300ml Vegetable stock
- 1 Tbsp parsley, chopped
- 1 Tbsp mint, chopped
- 1 Tbsp cilantro, chopped
- 1 Handful toasted pine nuts
- Salt and pepper
YOGURT DRESSING
- 100g Yogurt
- 2 Tbsp lemon juice
- 1 Garlic clove, crushed
INSTRUCTIONS
Step 1
In a wide pan fry the onion in the olive oil and butter. Once the onion starts to caramelize, add the garlic.
Step 2
Add the freekeh, spices, salt and pepper and stir. Then add the vegetable stock.
Step 3
Bring to the boil, lower the heat and cook for approximately 25 minutes or until the freekeh is ready.
Step 4
In the meantime, prepare the yogurt dressing by mixing the yogurt, lemon and garlic together.
Step 5
When the freekeh is ready, transfer it to a serving dish. Serve with the yogurt dressing, the herbs and the pine nuts.
